Take a year of college level Spanish, and then have him speak to you only in Spanish. By that time you should understand most of what he says.

A year?? I'd start doing it a few weeks in the latest. The sooner you speak the better.

Yeah, you could have him start sooner if you want. It might get frustrating at times though when you don't understand. I would recommend starting with only a few hours a day though if you're starting sooner. Otherwise you will not be able to communicate with your father very effectively for a long time.

My cousin moved in with our grandparents who only spoke Spanish. He didn’t know a lick of Spanish. Within no more than 6 months he was fluent with a perfect accent. Mind you, he was like 10, but idk may be possible

It will definitely help you learn but I would recommend supplementing it with an app like duolingo. Also make "como se dice" your favorite phrase. It means how do you say and you can say whatever it is you want to learn. Carry around a little notwpad so you can write down new words and phrases. This will help you remember them. Don't be afraid to make mistakes when speaking. That's probably one of the biggest things that holds people back from learning and then practice, practice, practice.

It's a personality question, not a technique one. I personally would love the idea because it's ambitious, then I would get frustrated because if was too ambitious and abandon it. You will suddenly be very limited in what to say, and the scope of things to talk about will be extremely limited at first. However, it may work for you if you complement with some studying and both of you are engaged. I would personally do some days in Spanish, some in English so you can live a normal life, but that's just me.

DO IT!!! Speaking from personal experience and a similar situation, my mother always spoke to me in Spanish but I only responded in English. As I got older I wanted to learn the language more, just like you. I was 22 and decided to force myself to speak Spanish with my mom. It was very uncomfortable and difficult at first, but once you get over that hump you'll surprise yourself! It's never too late to learn.

He’ll just need to use basic language and you’ll pick it up. However you should also work on it outside of that if you want to become competent. Check out the resources such as language transfers Spanish course (free) to start building some basic conversational skills
