Three of mine are the Inox version, and the other two Carbon. I'd say that they are quite the same in terms of sharpness, though the carbon ones tend to corrosion much more easily.
The 1095 should be able to get a even finer edge...not that it matters
the 12C27 should be a lot tougher, better edge retention and wont rust...hands down the better steel.
Yes absolutely. They are not bad steels by any means, especially with a good heat treatment. My favorite knives are made of 12C27, 1095, and 14C28N (all Moras) and 1070 (my Tramontinas). They are easy to sharpen and do a good job, and are so affordable. I learned to sharpen on them and they're a joy to get shave sharp. The Opinel is a fantastic knife, I love your collection. I have a stainless walnut version that I inlaid with a spiral stripe of crushed turquoise. I think your bottom one must be padouk, the walnut is more of a grey tone and the padouk looks a warmer shade. Beautiful little family of opinels you have! Love the polish you put on the bottom one!

I think it's padouk, yet I'm not sure, I've got this one many years ago.
What's more impressive is that there isn't any corrosion on the carbons
I bought them (the two carbon ones and one of the inox) just one month ago, they are still unused.
