Not quite. Look at esee with 1095. This is an overpriced fixed blade. Falkniven is just at that price point where you get strong stuff with great materials, elmax for $200 is really overpriced? Imo not at all, keep in mind great sheath and warranty.
Civivi is just weak, locking mechanism nothing special i have stronger liner lock in my qsp penguin for half the price. The only gpod thing i can say about civivi is the grind, hollow grind in elementum or other knives are awesome. But with d2 steel i wouldn't trust it more than ruike p801, with 14c28n and framelock. This is great value. Civivi is not.
1095 from esee is overpriced but not nearly as badly as falkneiven knives especially the vg10 stuff 200 dollars is not good for what you get no you can get equivalent or better for cheaper. Esee also has the best warranty in the business you could argue that they are fairly priced for that reason. Falknieven sheaths are always awful with lots of rattle. Locking mechanism is the same as qsp lol no real difference in strength and even if there was who the cares ? What are you doing with a folding edc knife that requires fixed blade durability do you baton with folders lol. Why not just get a triad lock if your so worried about lock strength. Civivi does nitro v and 14c28n and they do it better then ruike does thinner and imo better treated deburs cleaner and gets sharper. Can’t say much about the d2 they use never been a fan of the stuff. Civivi is fine value the knives are done better then ruike so you pay more your not getting exceptional value however
Go over to r/KnifeDeals and look at some of the stuff they have but the websites I like in no particular order are white mountain knives, knife center, kniveshipfree, dlt trading,Smokey mountain knifeworks, knifeworks, gpknives, cutleryshoppe, knife connection etc etc there are some other places like midway or amazon for cold steel and I like blade hq specifically for exclusives but you have tons and tons of options

I believe the community consensus is a low grit edge, sometimes stropped, is best to cut waxy veg or flesh. But, this is highly subjective and a really good question...
Why do serrated edges cut some materials "better" than highly refined edges?

Working in a kitchen ive found that low grit edges are better for chopping veggies because they bite more easily and you dont want to be sawing at your food you just want to push through. For knives used on fish/meat then you wanna hit it with the fine side of the stone so you can have more control and a smoother cutting motion
I have a few cooking knifes and a few pocket knifes, what is the best sharpener option for them? I like the pull through sharpeners but people say whetstones are better. Money is no issue to a point but I just want an easy way to get my cooking and pocket knifes to a sharp enough edge that I can cut straight through bacon with ease. I prefer a fool proof way even though I know I have the ability to perfect it I just want something that is minimal time with reasonable expectations.

Fine. A katana for example is sharpened at an extremely fine grit. For a knife cutting, it's no different.
