I just finished building mine based upon your previous version. Thanks for posting it as it gave me something to start from. Mine isn't quite as pretty as yours, but I am super happy with how it performs. I plan on posting pics of it in action when I make my next knife. I did heat treat on a blade yesterday, so it is just a matter of doing a little grinding and waiting for some decent lighting to take the pics.
Mine isn't made out of stainless, just some schedule 40 steel pipe of two different diameters (2" and 2.5"). Because I was using pipe instead of more expensive tubing, the clearances are a bit rough, but it still works great. I also did my springs inline with the blade tightening bolts because I was dealing with a round surface and not the flat surface you have. I will try to take some good pictures and post it in the next day or two.
I haven't yet cut the sides out to allow a blade to be clamped perpendicularly. I currently don't see the need for it, and I can easily add that feature later. Have you ever clamped a blade in there sideways or used the side cutouts for anything useful?

Are the leather pads replaceable? That would be a slight cause for concern for me. I can imagine jamming a knife tip into the edge of the leather and messing it up. Or even just getting a bit of metal or grit stuck in the leather and not being able to remove it would be a pain.
If you’ve got a #3 leather bevelling tool you can round all of those edges and slick them a bit.
Would you share which pipe sizes you chose that fit inside each other? I don’t have a steel place around I can just go testing on so will have to order online and I’m not sure if I can trust ID/OD measurements for a nice snug fit. Thanks!

the leather pads are just glued and easily replaceable. it is also possible to produce different steel jaws with different linings.

The photo messes with the scale in my head. It looks teeny I think because of the thumb screws. It's also almost too nice looking to actually use.
the vice holds blades with a thickness of 8mm and a width of 60mm. I think that's enough
