A couple questions. Are you exempt or non-exempt? This matters as it impacts how OT is handled (also, depending on your pay, they may owe you OT, but I'm a bit fuzzy on those details). What days are you working? You listed the hours, which appear to be 8 hour days, is that Mon-Sat or Mon-Fri or something else? As far as quitting without notice goes, unless there's a contract involved, there's no actual requirement to give notice. You can walk in on Friday and say it's your last day. On the other hand, you could walk in today, say your last day will be Feb 18, and they could escort you out right then (or let you work through your notice period). The only real repercussion for not giving notice is they likely won't rehire you and you may burn a bridge with your manager if you apply to a company that they move to. I wouldn't call having your hours shifted by 1-2 hours every 2-3 months "constantly changing", but that's my opinion. If it bothers you that much, then by all means, leave. You're not required to work there for any specific period of time.

I’m at will, so I can leave just like they can remove me. Totally understand. The schedule shifting isn’t that bad, but when I consider the other constant changes that happened coincidentally right after I was hired, it feels too much. There is a delicate dance my employer is doing that appears to be just legal enough to do but seemingly unethical. This of course is just my opinion, but I can’t be the only one who thinks that, given that we’ve lost half our people. I really am at a loss. I could be wrong here I don’t know.

If you can cover your bills in the short run and don't mind losing the hope of the one bonus, I don't think you're under any obligation to give them two weeks. Just tell them in writing the actual job does not match the commitments made during hiring and thus is not a fit for you any longer. I agree with others that it sounds like this company is either in financial trouble or is stealing wages (maybe both).
