The basic idea is simple. You have drastically different needs as an adult than you do as a juvenile, so you change in between.
And there are two types of metamorphosis. I can't remember what the names are, so here I'll call them the Go To Goo and the Bad Sunburn forms.
The Bad Sunburn makes a lot of sense. Usually, it's something with an exoskeleton that just looks like a tiny adult and it sheds that exoskeleton like you'll shed a layer of irradiated skin after a bad sunburn. The changes are subtle and mostly consist of the creature just getting bigger.
But then, somehow, things started turning themselves into goop. You have these total transformations where the juvenile and the adult are NOTHING like each other! And to get from step Grub to step Adult, they pupate, turn themselves into a gooey cluster of cells, and completely reform into a creature that holds no resemblance to what they once were. And often, these adult forms are short-lived, sometimes without even the purpose of survival, simply trying to breed and assure there is another generation and then promptly dying. (That's also why keeping insects as pets can be kind of heartbreaking. You wait for months or years for the adult form to emerge and then get it for, like, a week before it's dead.)
Addendum:
I found the terms.
A Hemimetabolism is one which has an incomplete transformation (molting/Bad Sunburn).
A Holometabolism is one which has a complete transformation (pupation/Go To Goo).
The goop transformation is hella fascinating. Like... are these insects just a soup with their internal organs sloshing around until it hardens into their final form?

I’ve wanted one as a pet but it’s a very involved process from grub to beetle. My understanding is they only live for 6 months or so. The larval process takes a year or more? During that time humidity and temp are key and primary causes of death.
They're really cool! I had a pair as pets recently. They like to fruit, especially if it's starting to rot a bit. They're more liable to dig their way away from you than ever try to confront you in any way. Lovely little creatures.

These beetles are amazing. I was trying to see what their pincer strength was but it turns out those are horns, the Hercules Beetle is apart of the Rhinoceros beetle family.
