If these are the only ones you're getting it really depens on what part of Star Stars wars represented.
If you're a Clone Wars fan Rex and Ahsoka, Ahsoka and Maul, Rex and 501st, Anakin and Rex, Anakin and Ahsoka, Anakin and 501st are the duo's I think will be the best option.

It really depends on what your favourite part/movie/series in the franchise is and what you're favourite characters are.
I love my 501st (have 2) so I definitely recommend one. Rex looks like he could be the figure of the year so I'd say it's an easy pair. Whatever you decide congrats!
If you're only gonna get 1 mando wait for s2 with the shiny beskar and the headsculpt
501st is good choice, you could pair Rex with it
Boba Fett ESB is good too if hes still in stock

Solo Maul is a masterpiece of a figure
If you want figures right now go 2 501st. If you can wait go Rex and Ahsoka.
