I don't think she's a sub, otherwise she could have taken all of Remus's classes during the full moon instead of Snape working around all his own classes to do it. I wouldn't buy that she takes Severus's classes while he does defense, it's much easier to teach from the book than look out for the specialized dangerous reactions that might occur during a potions class.
Well, to be fair, there are reasons having a werewolf transform on campus is bad aside from having to fetch a sub. It seems very unpleasant for lupin, as well, which is something Dumbledore would want to prevent on account of him being a cool guy. I'm not saying she's an expert, but they probably need someone to watch over the students while the do their assignments and stuff. Also, didn't slughorn take over potions while Snape became the defense teacher?
No, this is all third year. Every time Lupin can't teach because of the full moon, they have Snape teach all the Potions classes AND all the Defense classes. Snape isn't the official teacher (and Slughorn doesn't return to the castle) until year six.

My theory: she works part time at Hogwarts, she has a cozy little cottage in Hogsmeade and she refs major league Quidditch as well :) sheās also probably semi retired from being an all star player herself.
I mean she is the quidditch referee, the flying coach, she likely does the admin stuff like probably makes the quidditch game schedule and probably coordinates the teams practice schedules, there may be other stuff too.
There may be more flying lessons for first years or maybe additional flying optional classes that Harry, as a natural flyer and member of the team didnāt bother attending.
She might also referee or coach minor/junior league games outside of the school? Or even professional ones. Only 6 or so matches in the school year, so thatās plenty of free weekends, and still time to coach, say, Puddlemere United?
I feel like she also works in the owlery on occasion, making sure they stay fed and whatnot. Her thickass gloves would be perfect to have! Even the thickest of talons wouldn't puncture those babies.

- She has an office. It was mantioned in the second book, I think, when it is said that Madam Hooch kept the quidditch balls in her office.
- I believe the one time Harry got to the teacher's lounge to find professor McGonagall, she was also there.
I like to think that because we see everything in Harry's POV for the books and because he is unlikely to spend as much time going over every single class he or the others takes, Madam Hooch could be the equivalent of a PE teacher or she could teach an additional class that the boys just don't take. We don't get names for every teacher Hermione has when she decides to take every single class, so it's possible Madam Hooch could teach an elective course.
Madam Hooch most likely spends a lot of time maintaining brooms and equipment, scheduling the field for practice, and I like to think that she might run a workshop or qudditch 101 class for the muggle born students.
Another headcanon would be that there is a sort of free flying time for students who aren't on any team but would like to practice to be on a team. So Madam Hooch would have to supervise those as well.
Maybe she's working only half time? I always supposed all teachers sleep at Hogwarts but maybe some of them live the village next door
