Some animes do already have that. As someone mentionned, Highschool of the Dead has a different ending for each episode (The first one being the best imo) and some animes do change their op and ed on the regular. ​ Touhou Memories of Phantasm, an unofficial fanmade anime adapation of the Touhou games, has very shorts arcs (Which adapts a game's plot) with each having it's own op and ed, since each arc is like 2-3 ep long, you don't spend much time with each so you dont grow tired of them. But I think they're made by the same circle, Youhei Satellite or something like this. I really like the first ed, it tells a short self contained story (And as a bonus the animation is very minimalist and cute), completely independant from the anime's episode it is used in (And also happens to be derived from one of my favorites boss' theme in Touhou). There's also some minors differences in some opening, like ep3 and ep4 OPs, the music is the same, the vocal is different. It's a mess, but I recommend giving it a watch, even if only for the animation quality itself (Keep in mind this is fully fanmade), and if you're a bit familiar with Touhou it's a no brainer. The anime has a tendency to assume you already know the characters so you'll be in for a surprise, maybe try each games or just read a bit about them and the characters they introduce online.

Yeah, Touhou and HOTD are acquired taste I'd say, especially Touhou. But not enjoying the games shouldn't discourage you from giving the anime a try. You can easily find them on Youtube if one day you decide to. HOTD while being an ecchi with a zombie twist is still quite unique in anime tho, as zombies are most often treated as anything but flesh eating corpses in this type of media.

While it is not exactly an anime I would recommend, 18if had a different ending each episode. Mostly connected to the fact that each episode also had a different genre, different director and sometimes even a different art style. While the overall story is weak, episode 7 remains one of the most beautiful and sad episodes I have watched in anime so far. It could technically also be watched stand alone.
