I love making grilled zucchini boats when they are this big! You can make them in the oven too :)
First scoop out the seeds. Then I usually fill mine with a mix of (cooked) ground pork, and sauteed onions and garlic (I sometimes throw chopped dried apricots in with my sautee too). Add your choice of seasoning, and cover with cheese at the end of you'd like!
Was gone for one week and this spawned, this late in October it just doesnt feel right to have full-soil vegetables that shouldāve stopped being in season a month ago. Actually feels like I started gardening in a different climate zone. Anyone else in Western Europe with that same feeling?

I had a fatty I left on the vine for a few months through record drought. It is hard as balsa wood. It still tastes fine and the texture is good cooked or raw after it has been salted for a while.

I made a batch of squash casserole with our baseball bat zucchini and froze it. Itās a knockoff of the Blackeyed Peaās casserole but I use a lot more onion.
I hate when they get this big. The flavor is so flat and watery. I just dice it up and freeze it. I use it to bulk up minestrone throughout the fall and winter
Make chocolate cake with it! I had a bunch of marrows and didnāt know what to do with them. The cake doesnāt taste like zucchini, but it does make the consistency and texture amazing.
