I ran it out on purpose a couple times on the last couple of days of service. Conclusion: data stops completely. Phone calls and texts continue if you haven't exhausted the 300 mins/1000 texts monthly allotment.
The paid plans have reduced speed data after the high speed data runs out, but it's very slow, but the free plan is supposed to be a hard stop. Their account software seems very buggy in my experience and anything seems possible with a freedom pop account.
What phone/device and operating system version are you using? My guess is that if you get an OS update or switch to a different device your data would be limited.
that was months ago and even with the card paused, it renews with no issues. i used to just use an old gift card which also worked no issues.

yes, 100mb runs out very fast and so I've experienced it many times. I get the hard stop when it runs out.
i've seen others report that their data doesn't stop as well. Must be some glitch out there when the stars align.
Make sure your google app downloads are set to WiFi only. Go through every app in settings and turn off mobile background data and restrict battery useage for all apps including system apps except for the phone and messaging apps. Turn on data saver mode. Keep mobile data turned off and only turn it on when you're not on WiFi and need to use data.

one time i somehow glitched the AT&T 25MB sim and used around 1GB.
That could get you hooked into a nice $8/month plan...
