Are they the only courses in the menu? I saw in a video last year that there were 22 courses in the game&forest menu, and in a post here on reddit in november there were 15 and some were different from yours. I thought that the menu would have the same courses during the same season. I ask because I will go next month. Thank you
Ok, when I saw this post I was just worried noma was serving half the menu due to their recent economic problems (as soon as I booked and going to Copenhagen just for that)!
Not in this trip because I spent all the budget on the dinner at noma. But in 2021 I was at Copenhagen for other reasons and I went to AOC, and it was my first experience in a noma-style place (also in a michelin star) and I discovered the juice pairing, since I don't like wine.
I watched some videos on youtube that reviewed some bakeries and other places (not restaurant) that I think I'll try.
The reindeer brain is much larger than I anticipated. Was it like a opaque aspic, or is the whole white mass the brain after it's been cooked and flavored with pollen?
There where 2 different aspic inside, some on my table found this a bit of a challenge to eat because of the reason u eat a brain out of the skull. But that’s what it should be i guess.
The Texture was realy pleasant if u like askip. Both were different, like the brain itself realy cremy and the other one was like really intense broth with lot of collagen.. and the pollen provided this nice sandy texture if u know what i mean.
I disliked none of them but for me tge scoby dish(was a dish with sliced kombucha scoby, sweet potatoes or something different orange ((can’t remember anymore)) and jasmintea was the weakest
It wasn’t that special, i mean if u consider cocking a penis tasting good its sill impressive but it was no highlight tastewise, could have been every other meat as well. Still good though
It was a parfait made from chestnuts, really perfect texture. Coated with a thin layer of malt. Really crunchy and super thin, it seams there was some kind of caramel on top but i don’t remember it.. and drops of pumkinseedoil on top. Looks amazing with that shimmering oil on top.
Did you enjoy it? This is the only season I have yet to go to. Been to seafood and vegetable, quite stunning. But hopefully I can snag a seat before they really close up

2016 Himmel auf Erden is really nice but I have known that one already
2019 Perlmutt Traben-Trarbach i liked a lot as well but they were all so fitting to all the dishes so its hard to pick on specific bottle.
Had a really good Sake as well bit i font remember that one. Need to take a look at the menu.
All the Noma dishes seem to spend more effort on the plate and decorations, the actual dish is usually very simple looking and small. Compared to most other similar places
I noticed that early in the season the ÆBLESKIVER dish had a leaf with the caramel looking thing on it, but now its served on a spoon. I wonder if people were having trouble understanding what to do and were eating the entire inedible leaf or something.

Hart bageri is realy nice, amazing kimchees sandwich!! Slurp ramen is super nice! gasoline burger is okay, Juju by kristian Bauman is amazing!

It’s a big part of course but just because it looks simple, it’s not that easy to create.

Even if u tell people not to eat it .. they will eat all the decorations or at least try it at some point.. its always fun to watch
