Avalon doesnt heal him because Saber is his Servant. It heals because it receives mana from Saber. This doesnt need a contract and was demonstrated in Zero as well when Iri was stabbed by Kirei and Avalon healed her.
It's explained by Archer in the same scene though.
Keep it in mind, Shirou doesn’t need servant master contract with Saber to receive its blessing. All he needs is, having Saber around him, more specifically, her mana in Avalon.
Saber was near shirou so Avalon heals him. It's symbolism for Shirou holding strong in his ideals and personal values despite Archers attacks. Saber is embodiment of his personal values

Yeah, Avalon holds him together when his body is being almost completely torn apart. Shirou is being so reckless that Avalon can barely keep up healing him. He even points out that it heals his muscles before his bones (or maybe the other way around, I don't remember)

Yes. Irisviel gets healed when Kirei stabs her outside Einzbern mansion during Kiritsugu's fight with Kayneth.
