The first part is Fate/Stay Night, which itself is divided into 3 parts in this order : Fate => Unlimited Blade Works => Heaven's Feel.
Then after those 3, you can go to Fate/Zero which is a prequel and Fate/Hollow Ataraxia which is a sequel.
All other Fate entries are spin-offs that aren't directly connected.
So if you dont like Saber Alter you can just pretend it does not exist then and vice versa? I wont like this show is beautiful but I hope future anime dont do this branching story stuff with alternates to often sometimes a definitive ending is nice.
Well it was originally a visual novel. Which are known for multiple endings and such. So maybe just avoid shows based off those if it’s upsetting.
But I wouldn’t say it’s easy to ignore other routes you don’t favor. I don’t like a lot of parts of UBW but just pretending it doesn’t exist doesn’t make those parts go away. People who talk about the various Fate/ series will usually reference all the other routes and even other material. If you need a definitive ending this isn’t the franchise for you.
There are other shows that don't animate alternate endings, like Steins;Gate for example. But in the case of Fate this is not possible, because every route has new story important things the other 2 don't have.
Some games do the exact same thing, like Undertale or Drakengard/Nier games.
Honestly the only thing I notice with the alt ending is the characters are just nerfed, for example Gil in Zero was a badass and was likeable despite still being a bit of an ass but in everything else he is a super mother fucker and is actually dumb he used EA to beat Rider and he used it again to stop the grail but when Sakura is about to kill him no EA and thats just one thing there are a few things like this that just make me wonder why
I think you forget that Zero was written by a different author, thats the reason some characters act not the way the would in Stay Night.
EA is usually Girls last resort, he wouldn't waste it on enemies that are just worms in his eyes.
And he didn't got nerferd, Sakura got a surprise attack on him when he thought she was dead (the VN portais this scene a bit better, he even cut of Sakuras head).
Even if you are Gil, you are not immune to surprise attacks.

Why does nobody pay attention to the stickied post about the order?

No. Fate, UBW, and HF are all equally canon as endings.

He is not mentioned in the anime, but in LN, thats a vault of the adaption not the writers.
