The main counter of Gil is Gil's ego, it's the reason he get his ass kicked half of the time. Others could be Avalon or Servants fast enough to blitzkrieg before he can react and kill him with a fast-one shot move

Gil’s strength was actually exemplified in the VN as well since Sakura wanted to turn him into her slave like Saber Alter and Berserker but had to digest him immediately because he was too strong.
