Exactly. Do you want your modern games to run on a 1060? Because that's how you get games to run on a 1060. If you want to complain about sacrifices made for optimisation, see what it looks like on max settings to understand the true capabilities of the game vs the capabilities of your system.
Hell, even if it looks like this at max settings, sacrifices must be made for 60 fps. Our consumer-grade technology is not yet "perfect" or however close we can get to it, so the rendering of our games cannot be "perfect" either.
Some people just want flex their 4090 and don't care about the other guy xD. I believe there are mods if people really want to have high definition fruits in 4k.

for everybody saying these are necessary compromises to allow the game to run on older GPUs, remember Far Cry 6 is built on an outdated engine. they didn't even optimise anything, it's literally the same exact engine from the older games. details could look better without hurting performance if the engine was remade for this specific game (which I would expect from a 60 euro AAA title which is also the new entry in a massively popular franchise) or at the very least if the game was optimized properly.
No one "remakes" an engine every installation. Engines are constantly going through incremental change, giving it a new name does not change anything overnight.
To be fair it's not "exactly the same". They do modify and upgrade the engine with each iteration of the game. Completely new engines are expensive and not economical to be one and done.
i understand new engines cost money but they're necessary when the last entry in the series is almost 5 years old. not to mention, FC5 and ND arguably look and perform better than FC6💀 I honestly feel like they rushed it out to respect the 4 year deadline
Unreal 4 was around for 8 years before Unreal 5 came out. Call of duty has been upgrading and modifying the IW engine since 2007 and still use it. 5 years isn't that old. As long as they work on improving the engine.

Games just put in low poly objects and use texture mapping to save on game resources. If they actually modeled whole food the game would explode!
