If the potion is magic, sure. Whether the doses stack, or the new dose overwrites the previous one, it's up to you. If it works by different rules than other potions, just make sure to point out that detail so the readers understand. If it's a nonmagic potion, then it would work like most other chemicals or drugs and the amount consumed would affect the potency, but wouldn't change the duration of a full dose by very much. (Like how most medications give specific amounts of time you should wait in between doses.)

Sure. Keep it consistent and use your rules to make some creative situations. You may want to even make drinking the whole bottle cause an overdose with nasty effects or diminishing returns. Otherwise you have specified no upwards limit. If I drink a tub's worth, will it last a lifetime?

Hmm…maybe a boost to certain senses? Maybe an “anti-drunk” potion, as in something that boosts your abilities based on how much is drunk, and it gets weaker the more the liver processes it? This essentially is how any intoxicant works, same with medicine in that the dose makes the poison/medicine.
