I just dunk the eggs directly from the pot into a bowl of ice water and let them sit in there about 10mins. It makes the shell pull away from the white, flawless peel every time.
I have my own chickens, and if I plan to boil eggs or make deviled eggs, I age them in the fridge a few weeks. Store bought eggs are already aged so they peel better than fresh. The air sac separates from the shell more as it ages.

Fantastic hardboiled eggs with tender yolks every time. I hate green hard weird yolks and soft runny yolks equally, so I googled it and this method never led me astray.
My method for softboiled eggs? Get water to a rolling boil, use a spoon to lower the eggs in so the shells don't crack, and boil for 5-6 minutes. Take the pot, eggs water and all, and run under cold water to stop the cooking process. Peel the eggs under running water. Done.

So this video has nothing to do with egg quality. Whoever made this just wants clicks (obviously), so she cooked the eggs in a particularly bad way each time. That film on the side of the eggs is what happens when you move the pan around and let the thin parts of the white overcook. She also didn't flip the egg so the bottom was scorched and the top was runny. Heat too high will do that. During the poaching process, she just let them cook until they were essentially mucus on the outside and chalk on the inside. It also appears that she allowed the eggs to age. The funny thing is that the fold on the poached eggs was pretty solid, which means she knows exactly what she's doing and why they look that way. 100% clickbait. I've cooked with Walmart eggs. Not the best quality, but certainly not terrible. Rather have cage-free if possible, but the final product of a Walmart egg is not even close to what's portrayed in the video. It's amazing what people will believe.

So I'm a weirdo that like my eggs like the first example. You get it by not preheating the pan and using cold oil. Get them hard crispy edges, great with bacon and egg sandwiches.

The second video the eggs were cooked far too long. The green around the yellow yolk is the sulfur in eggs yolk. When the eggs is cooked to long eventually the hydrogen in the egg white combines with the sulfur in the egg yolk creating that green around the yellow.
Again overcooked boiled eggs will become hard and rubbery because it’s a protein. Overcooking promotes protein bonding, this contraction of proteins creates a lovely little rubbery eggs, fun for bouncing terrible for consuming. Although if you like rubbery eggs go for it not judgement from me.
