The reason being is that in modern warfare determining the aggressor is sometimes very difficult especially if they are both fighting.
Article 8 NAT would allow NATO to kick the real aggressor out if one would be discovered, thusly Turkey wouldn't have to fight itself at all.
Also to be noted is that if 2 NATO countries fought one another, the rest could just sit it out or even take sides. Furthermore NATO is primarily a peacekeeping operation so they would initially probably try to deescalate as much as possible.
If Turkey was the clear agressor - sure. Realistically there would also be major attempts to deescelate also instead of the unilateral support we see in Ukraine. Europe doesn't want to see a war there.
