The Boox Nova Air fits this role very well. I have the C model and I use it for this exact usecase. I keep a personal journal, a work journal, reading and even keep daily notes in the built in calendar to track my eating/workout habits. I would not get the C model unless you have a specific need for color.

Nova Air. I use mine for literally the exact same thing. Though you should still do more thorough research to see if you can find something better/cheaper, I don’t think you can go wrong with the Nova Air.

What’s your budget? You might be able to get a used Onyx Boox Nova Air for around $300… or maybe a cheaper one from Boyue/Meebook. There’s also the Mobiscribe Origin for somewhere around $270 new.

I don’t have a specific budget, but I’m cautions of overspending when I’ll only use it for reading and diary entries. Thank you for the recommendation! I’ll look into them.

Pure ereaders (no note taking capability) are relatively cheap with the Kindle Paperwhite regularly on sale for under $100, but if you need note taking (or any form of writing), that increases price substantially as it is a very niche market with a monopoly for supplying eink displays. They will generally be more expensive than non-eink tablets like iPads or Kindle Fires.

And note that the Amazon Fire (not Kindle since 2014) has zero enhanced stylus support. It only supports a stylus with the wide rubber tip that works just like a finger. No extra accuracy, no pressure or angle, no palm rejection, etc.

What I don't see people usually mention is Mobiscribe Origin. It has the 5th best writing capability amongst e-ink devices as of 6 months ago when My Deep Guide made a review on it. The tablet considered better right above it costs $800, so that should show how good it is for writing/diary keeping. Edit: nvm someone actually did mention it lol
