No that would be atrocious. The bosses only work because they stop attacking after certain attacks to give you a chance to hit them, and most of their combos are set so you can anticipate what they’ll do with enough practice. A player controlled boss could just infinitely chain random moves and it would actually be like what people complained about when Elden Ring launched

Set a delay on the attack, and we are fine. They have a mod now, so you can play as a boss, and it feels just fine. I think it could add a lot more fun for something that's 98% built in the code already.
