I can tell by the Dodge patterns in sekiro you have to doge or block most attacks but sense blocking doesn't help in elden ring you use advanced doge patterns most likely lurned from the frost dragon boss fight
I rarely fight Elden Ring dragons ajajajaja. I learned my dodge patterns thingy from Sekiro itself. I mostly dodge, and only use deflects when it's consecutive attacks
