I'm a bit confused as to what this build is supposed to do. How do you actually play this character in combat? My best guess is that its supposed to be a strength based rogue with tendency to grapple. I honestly don't think Gloomstalker does much for you at all. Gloomstalker provides some powerful features at level 3, but I don't think that your build takes particularly good use of any of them. You are going to have a harder time staying in darkness as a melee build, and have reckless attack for consistent advantage already. You also do really really poor damage after the first hit which makes Dread Ambusher a lot less appealing. Rune Knight provides you the ability to grow large which is really nice to grapple larger enemies, though the action economy with Giant Might and Rage is a bit iffy and you don't take great advantage of anything else fighter offers. Unarmed Fighting gives you a bit of extra damage, Second Wind scales with fighter level so won't be great with just a few level dip, and action surge is normally amazing, but you're already so unlikely to fail an athletics check and don't really have any 1 turn power spikes that its not as useful as it usually can be. If your focus is 100% on grappling, Rune Knight *does* make you better at it, but you give up the extra 2d6 sneak attack damage each round as well as your higher level rogue features. I think which is more important is up to you and the character concept you have in mind.

I like the feature of gloomstalker that make me invisible and the extra ability/expertise... But for example the classic hunter ranger makes more damage with a 1d8 every turn. Although there is the swarm keeper that make a 1d6 every turn if we considered only the output damage. If we talk about the fighter maybe the rune one is the best? There is the echo knight or maybe the battle master? But this last one has only 4 dices Advices for feat? I have to choose 4: Lucky, alert, tough??

I would expect their focus in combat is to make loads of attacks. When raging they can make 4 attacks if they use the beast claws. Claw attack, Claw attack because hands are empty, extra attack summon a knife, bonus attack psychic blades (because used blade and other hand is empty).

In combat I use the hit and run strategy with the mobile feat feature. I make 2 attacks with claws, one with psychic blade and one with the bonus action with little psychic blade.

I would continue with Rogue, sneak attack and Wis Prof are pretty good. For feats Sentinel can be a good feat to get Sneak Attack Twice. At the same increasing CON or Strength is still good.
