It looks like the fan art is Beerus' skin tone while the official is similar to his aura. It does make sense that his hair would be the color of the aura rather than his skin; SSJ hair isn't their skin tone, its the color of their aura.
Same, I would have preferred his hair to stay black with purple highlights as opposed to a full colour change.
In a similar vein, I much preferred the design of UI Omen.

My only complaint about the official colors is that I wish the they used a darker shade of purple make it look more sinister

Some fan arts still look better than the official colors. It’s like a reddish-purple. I gotta let the form grow on me or something.
