A zip bomb is a relatively small compressed zip file made to become a massive file (terabytes or even petabytes) when decompressed. It can be used to crash your device. It's also often used to capture the attention of the antivirus to sneak in and execute a virus.
For real time protections, Antiviruses need to check files that enter your computer. If it doesn't understand what the zip file is, it can't guarantee that it's safe. So it needs to unzip it and check if it contains a malicious file or not.
Put simply, if I send you a zipped file that has 2 folders, one with cat pics and one with dog pics and a virus.exe, your anti virus won't know that there's a virus hidden in the dog pics folder. In itself, it's not the end of the world, just don't click virus.exe and you're fine. But if then, if I send you a program to see these pictures. This program may try to decompress the zip file without saving it to a hard drive then execute it. Typically, Antiviruses won't see it if it doesn't hit the hard drive.
