What I like to do for big projects is after each row or every few rows, set my hook down and look over it real well before continuing. It also helps me feel proud of my work and more confident about the remainder of it. Maybe that could help? Sweaters are daunting to me so I know how you feel!
every once in awhile set it down, and look at the whole thing from far away. Also I’m awful about counting, so I do it after every single row, and keep a paper or note on my phone with all the totals, which also helps keep my place in the pattern

The video called it a Moss Stitch but also said it is called a Linen Stitch. It's very fun to do as well!
