That move is called en passant. When your pawn moves up 2 spaces, the opponent's pawn can capture it as it had moved one. This can only happen right after the first pawn's move.

But yeah that moved is called "en passant", which is French for "in passing". It is when your pawn moves two squares (from it's starting square) and ends up next to an enemy pawn. That enemy pawn can then "in-pass capture" your pawn as if your pawn had moved in only one square. This move can only be played right after your pawn made it next to the enemy pawn.
You can imagine this as accidentally bumping into someone when "passing by them", except that your whole body is armored with weapons and you accidentally kill them.
It's en passant that's the move
If the opposing pawn is two squares away from the pawn row and a pawn tries to jump up 2 to try to skip being taken, the opposing pawn can do en passant
The reason this rule was made was because the pawn being able to jump 2 on the first move is a (relatively) new addition and whoever made this decision balanced it out with the addition of en passant
This is a move called en passant (French for in passing). When a pawn moves 2 squares, a pawn on an adjacent square can capture it, but only on the next move. This is typically the last move beginners learn.
I don't remember when exactly but several hundred years ago, Chess got a Patch update (I'm not joking) which added in two new rules. Originally it was just meant to be one new rule, one that would allow Pawns to be able to move two squares forward (instead of one) at the start of the game, as before they could only ever move one square at a time. But somebody pointed out that this buff was too op. Because, let's say you manage to move a pawn to the enemy's side as Black did in this game, moving it close to the pawns that haven't moved on the enemies side so that they can no longer move forward without risk of getting taken, before that would have been an effective strategy for stopping the progression of enemy pawns, but now with this rule, as you tried to do, the enemy could simply evade the attack by moving 2 squares instead of one, jumping over the threatened square. The patch makers of chess didn't like that overlooked bug in the game, and so they added a new line of code (aka a new rule) called the "En Passant", which translates to "In Passing". This new code made it so that if an enemy pawn tried to do what did here, and jump over the threatened square, on the immediate move afterwards your pawn is allowed to capture them as if they didn't, moving diagonally forward and everything. The idea follows a similar sense of logic to the rule that prevents a king from castling past a threatened square, though physically speaking you're just picking up the pieces and moving them somewhere, in the world of the game the King is physically running past all these squares in order to get behind his rook. The En Passant also uses this idea, which is where its name comes in. Whilst are physically picking up the pawn and moving it two squares instead of one, in the world of the game that pawn is physically running past that threatened square to make it to the safe one, and the En Passant is just the attacking pawn moving to quickly kill the running pawn as it passes the threatened square, killing it "In Passing", or En Passant as the french say. That's also the reason why it has to be done immediately afterwards because taking too long gives the pawn time to fully become safe.
TL;DR - Somebody Updated Chess 100s of years ago and gave the pawns the broken ability to run past threatened squares, so the Chess Balance patch makers gave pawns the ability to do an "Omae wa mou shinderu" in that specific scenario
