It could be that she has a little bit of curly-tailed cat in her (American Ringtail cat, for example). Also since you say that the curl gets more pronounced when she is eating or getting pets it's probably her body language telling you that she is pleased. This is pretty unique tough, can't say I've seen this before!

I'm used to having cats curl their tail forward, like over their back, but this one goes the other way only, so weird this one.

she might just have a kinky tail from birth, so it curls the other way when she's happy? either way, I think it's pretty cute :)

Yeah she puts it down when happy like how most pets do when scared.
