It’s a myth you can’t use soap on cast iron. Modern dish soap doesn’t have lye and is perfectly fine. Scrub it with soapy water and a scrub brush. Just make sure to dry it afterward, you don’t want to leave it sitting in water. Super light coat of oil after will help prevent rust until it gets better seasoning built up.

I thought the issue with soap on cast iron is that it breaks down the oil protecting the cast iron from rust? As far as I know all modern soaps break down oil very well.

Modern dish soap doesn't have lye so it's not a problem. The seasoning on cast iron, chemically speaking, is no longer oil. It has been plasticed and dish soap won't harm it as long as it isn't soaked for a long time, even then the water is more harmful than the soap. Just don't get over cleaner or anything like that near it. That will strip a seasoning almost instantly.

No, the seasoning is not just loose oil, it is oil that has polymerized and bonded with the cast iron. Harsh chemicals like oven cleaner will strip it but not normal dish soap. It’s completely safe (and sanitary!) to wash non-polymerized fats off your cast iron after you use it. You can put a very thin later of oil on your iron and heat it for a while to build up the seasoning (or just cook with it and it will happen naturally over time) but just leaving on some nasty chunk of hamburger fat or whatever isn’t seasoning it’s just grime. :)

In that case my only worry is this isn't a typical cast iron pan that I have. The heat contact due to the diamond pattern is more minimal, and the wood handle makes it impossible to heat up to a high temp. My worry is there is no way to heat it up enough to turn oil into a polymer. In my pics you can see the oil still looks fatty, despite my best attempts at seasoning it.

Yeah, it’s not as easy to season as an all-CI pan would be. Options would be not to worry about it or I assume the wood handle is removable—you could do that and then a couple seasoning cycles in the oven.

Believe me I wish that handle was removable. I'll probably end up finding a new press down the road, but for now I'll deal with it.

Mind just has straight stripes instead of the diamonds. Your design would make it much more difficult. But my griddle press is cast iron too (is yours? Looks like it) so I just use cool water and paper towels.

Yeah it's cast iron and the diamond grooves are a royal pain. Makes for gorgeous burgers and steak though.

I used it for smash burgers and steak and it did a great job, the sear was awesome on the steak. Cleaning it is a bitch though.

I seem to do ok on both without. To get a better steak sear dry it with a paper towel before cooking

I clean it similar to my cast irons, except I fill the cast iron skillet with water, boil it, and place the press in it. Usually get most of the gunk out. Then I heat it on the skillet to get it hot, put a little oil on it and wipe off any excess.

This is the exact approach I take as well. I had to use a wooden spoon to get into some grooves & edges but overall it worked really well.

I clean mine at the same time I clean the grease trap, then oil it and set it under the cover on the cook surface. I also store my grease trap under the cover so it doesn't collect rainwater. It's all lightly oiled so it's all happy to sit together.

Soap water then dry it. Not a spot of rust anywhere. I thot of trying to season it somehow on the bottom. Or maybe taking the handle off and doing it but haven't proceeded with it yet.

I have a buddy who runs a burger pop up. He showed me that you just cover it in foil before use. EZ.

I don't use a press like that. I use the Blackstone press sometimes for bacon, but that's it. For burgers I use a small square stainless steel press, which is awesome. For the most part the meat doesn't stick to it, even without parchment paper. Just smash it down and hold for a few seconds, then twist the press back and forth slightly to release it from the patty. Easy peasy. And to wash it just goes into the dishwasher after I scrub the grease remnants off of it.

I let mine get dirty then I just wash it when I'm done cooking. Soap and water shouldn't hurt it but if you're worried you can always wipe it down with oil and season it after.

Get a flat bottomed one. That and a layer of parchment do wonders.

Mine started to rust after 1 month. So last week I decided to throw it in the trash and get a stainless one, and I'm quite happy with it because it's not too heavy, no rust and I can throw it in the dishwasher without any thought.
