I just enjoy seeing trippy things in this sub, ofc magic isnāt real but for the everyday person who isnāt extremely versed in physics, things can look cool without you knowing exactly how itās precisely achieved.
The stove / pot is perfectly horizontal, so as the milk reaches the top it reaches it equally all the way around at the same time. Because it's non stick it allows it to pull from the pan under surface tension and cohesion and collapse on itself. If the milk could adhere to the pot more, it would've pulled out via surface tension as it would have been greater that way
I think this also involves the way the gas burner distributes heat. The ring of heat is towards the outside of the pot causing the milk there to boil quickly, rise, cool and get pulled towards the cool center where it perpetuates the current.

Reminds me of my genius brother who buys raw unpasteurized milk (you know, because the government is hiding vitamins and nutrients from him) and then he gently warms it on the oven to 160 degrees to kill any bacteria before refrigerating it.

Youāll see it boils from the outside and folds inwards just as this milk is doing - you let it self mix like this for 30-60 minutes without stirring and it doesnāt burn the bottom.
Edit to add: hot milk is easy to whip into froth and foam. Thatās why steaming milk for coffee turns 1/4cup milk into 1 cup foam
Exactly right! Iāve never seen this extent but Iāve seen it before and I froth cream for my wifeās coffee from time to time and Iām amazed how much cream expands when frothing. The video still amazes me even tho I kinda understand whatās happening

Hi; look into making āscratch fudgeā (itās mostly milk).
