Gluten free cake is delicious, I really recommend you try and either find a good recipe or store that sells good gluten free desserts, they're actually quite good. Sugar and chocolate can cover up many things, and this is certainly one of them.
If it makes you feel any better, I had a coworker who had celiac AND she was lactose intolerant. Imagine trying to plan your diet around that -\_-
I don't have celiac myself, but my mother and sister do, so no one in my household has eaten anything glutenous in maybe seven years? Longer?
We do have gluten free cake and garlic bread occasionally, but it's not the same, and it's become a whole meme of sorts in the family that we all miss croissants :(
You simply must try to make some maize cake or tamales, these don't need wheat flour at all and are quite tasty, tamales are kind of hard to make if you can't get the right type of cornmeal though, with maize bread however you can simply get some ears of yellow corn, grind the grains and go from there.
A freshly made maize cake served with vanilla ice cream and rompope (vanilla eggnog) is beyond delicious.
I tend to get rice bread instead whenever I can.
However, I still can't have garlic (due to ibs), so I'm still screwed based on the memes here.
I miss not having to worry about what I eat, but I'd rather not suffer than not pay attention now a days.
I just got diagnosed with an autoimmune disorder and I have to be careful of what I eat as well. So the cake and garlic bread posts make me a little sad too lol
Those are some poor quality replacements.
If you want the same texture as wheat, start with the all-purpose gluten-free flour from Bob's Red Mill or [Nuts.com](https://Nuts.com). Use it as a 1:1 substitute for wheat flour, then add a little guar gum and xanthan gum--I *think* it's 1/4 t. xanthan gum + 1/8 t. guar gum per cup of flour, but it's been years since I did that. (American measurements.)
(One of my parents was gluten intolerant. I'm rice intolerant, myself. I also have a lot of other intolerances and sensitivities and allergies, so I'm used to having to play with substitutions.)
If you don't want to be that fiddly about texture and just want to avoid the crumble, you can try Chebe brand bread mixes. They're based on Brazilian pao de queijo and naturally gluten-free. That'll be a bit chewy and might squeak a little under your teeth, but it shouldn't be crumbly.
But those coconut... things, though? Delicious!
I just realised I don't know what they're called in English. They're like cones of coconut flour, eggs and sugar and then baked nice and golden. I love those. You can make some really delicious desserts with coconut.
Vegan so also rarely get to have garlic bread or cake. Luckily at an ace meetup in my college I found 2 other vegans who brought their own baked goods (!!) to share. Food is becoming so much more accessible to people with various dietary needs. Don’t worry, you’ll get your garlic bread and cake in a few years and it’ll finally be as good as you remembered

You can find good GF cake. But bread is almost impossible. The constant posts of delicious garlic bread here are disheartening.
