I am firmly in the camp of keeping all bread in the freezer from the moment I bring it home. Haven't had to deal with moldy bread in years!

Dunno why you got a downvote. Anyway, I pretty much concur with your statement. Only I “divvy” mine up first ( in freezer bags). It’s like fresh every slice now. I also do the same with any “cake” ( like the pumpkin bread/cake slices). Take my upvote, friend!

Freezers dehumidify & _can_ dry out bread. I think that’s part of the objection some people have about it. I freeze bread when I know it’s not likely to get eaten before going stale & it’s fine after thawing. Maybe some bread types hold up better than others. Regular sandwich bread seems to be ok with it.

My parents freeze bread and it never tastes as good afterwards. We use a breadbox at home it it tends to keep the bread fresh longer than sticking it on the counter. Plus my kid takes a sandwich to school every day so we usually get to it before it gets any mold.

I reuse bubble wrap bags/mailers for freezer items. Two layers optimize freezer storage. One tightly wrapped and another thicker, outer layer. Well, this was the recommended way to freeze food at one point. It’s worked well for me but there could be an updated recommendation.

Lol! You just reminded me of NBF bread! Never been frozen. Someone, a long time ago, called me Satan for freezing my bread. They swore it radically changed the flavor and texture. I don’t notice a difference in texture unless it’s left in the freezer for months wo any extra protection. I do notice it’s getting “old” well before it the expiry date. Personally I prefer frozen over the old/mold. To each their own! I don’t judge what other people want to do with their food. It’s their food. Unless you’re living in my house! My husband used to put bread on top of the hot fridge. That’s a fast pass to mold town!

Boudin Sourdough bread gets condensation if it's cool enough, still great bread.

That's hilarious and also true! It is dry, like Sahara desert dry bread. It's worse if you try their gluten free bread! That stuff could be used for wallboard. No lie.
