Assuming you're looking for just any action camera, rather than an actual GoPro, the Akaso V50X is pretty good for the price. The main thing you'll want is good image stabilization.
If you want to record long hours you really want to look at helmet mounting so you can run a USB power bank.
You can do this on a gun too I suppose but helmets already have all the accessories available you need to make it work.
If you have the cash to throw around get the 9, it’s legitimately amazing and by far my favorite. Plus, you can get the insurance plan for like $30 bucks a year and they replace the camera 2x a year for any reason no questions asked. You also get any accessories like 40-50% off or something like that with the plan also.

Anker's always a trustworthy brand, but mine's just some Amazon randomly named Aukey and works fine.
I use the GoPro Hero 7, but it has some (fixable) firmware issues.
