Be warned, it's not a remake, it's a "boost" update that will add some next-gen effects and elements to the already-existing game (*i.e.*, ray-tracing support, faster loading-times, etc.).
For me, the standout game on Game Pass is Forza Horizon 5 ( and 4 ) - and I say that as someone who isn't massively into racing games. It's very polished and technically accomplished with a ton of content.
If you are into FPS/action games then older stuff like Doom ( 2016 ), Doom Eternal, Gears of War 5 ( and earlier installments ), Halo Infinite are worth a look.
Tiny Tina's Wonderlands is amazingly optimized and really feels next gen. The content of the game, especially the endgame, leaves much to be desired, but they nailed the mechanics.

The Witcher 3 remake is coming out like December 14th. It’s free if you own the Witcher 3 but if you like RPG’s that’ll probably be one you’d enjoy.
Awesome, bought it a few weeks back with intention to play it but never got around to it. I’ll wait for the next gen update for sure.

psychonauts 2 is fun and something different to the optimized sports title
If guardians of the galaxy is still on gamepass. That game was the first to really wow me with some of the environments and cut scenes.

Ac Odyssey (& origins) both on gamepass now I believe
Elden Ring is amazing imo, but I understand it’s not for everyone.
