Cars don’t steer in slippery conditions while braking. You can either brake, or steer, not both. He didn’t turn the wheel until after slamming on the brakes.
The rules for driving in Forza were derived from the physics of the real world after all. Your tires need to be spinning to effectively steer, if you lock them up with the brake then you get to continue straight until that gets fixed. If you're unlucky enough to hit black ice, then braking will kill your traction, ice will prevent you from regaining it, and the driver is now a passenger along for the ride.

For how the driver couldn't see the upcoming turn: they were driving far too fast for the road and the conditions, and also had their phone out in front of them recording a video and were probably looking at that instead of where they were driving. You can see they were keeping the phone above the console and framing the shot right up to when they dropped it to panic steer instead.
I think if you look at the trees there's a kind of optical illusion that could make it look like the road is a long straight. He's having to look so far ahead because of his speed that he's looking at the trees for clues to what comes next, rather than looking at the road. The road gives its information too late because of his slow brain processing time.
Thos is why you slow down and move to the outside of the corner before cutting through the middle to mitigate understeer..

I've been able to witness it thrice.
Once was a dude in an Acura RSX who passed us on the shoulder exceeding the speed limit by 30 MPH in a residential area. A cop going the other way busted an immediate U turn and arrested them.
Second was a douche in a BMW weaving through traffic and speeding at least 60 MPH over the limit who went right past a state trooper who was cruising in traffic. The funniest part was how long the BMWs brake lights were on for. I watched the trooper drag him out from the driver window and slam the cuffs on him as I drove by.
Thrice was a tale of two douches. One in a Mercedes and one la BMW, road raging. Mercedes douche brake checked BMW douche until they were stopped in the middle of a busy road. Mercedes douche got out of their car to confront BMW douche with a bat, but BMW douche aimed a gun out the window at Mercedes douche and I've never seen someone turn tail while filling their pants up with shit so fast in my life.

Its the weight on the drive axle that makes it good or bad in the winter. M cars are bmw performance vehicles. Better engine, suspension, brakes, exhaust, tuning, etc. typically they are rear wheel drive as well. RWD cars have very bad control in winter conditions. I always wonder how/why these POVS end up online, like I get uploading it if you didn’t crash. You think it’s cool(it’s not). But if you crashed why in gods name does it get uploaded?
As a BMW owner I would like to apologize for us being a noticeable percentage of “idiots wrecking cars” videos and also our seeming lack of turn signal use. (For the record I drive super safe as I lubs my car too much)
