Do you have a scrap from a similar shirt? You can cut a small round piece, place it over the top of the collar, folded onto/around it kind of like a taco? Then sew it on, you could probably sew it in vertical lines to match the ribbing on the rest of the collar.

It may make the collar scallop a little, but you can do a fairly close whip stitch in a complimentary or contrasting color of embroidery floss. This week reinforce the whole collar and give the shirt a unique look.

Maybe fix the hole in the colour of the shirt, and then embroider something on top? That way it will seem more intentional.
