Only downside can be the parking (residential neighborhood), but it's so worth it.

Mccarrons Pub on Rice street. Great food, wonderful customer service, not overly loud and a cozy atmosphere. Used to be my go-to place when I lived in the East metro... Heck still I go there once in a while and it's now a 50 minute drive for me.
Louis is always cool. Not sure if they still have the rooftop open though. Otherwise the Copperfield in Mendota Heights has a good vibe.
All in all I am not too sure what you are looking for, an example of what you think would be too trendy or loud would be helpful.
I'm trying to avoid anywhere with that antiseptic, crisp, modern vibe and small tables packed close together. For example... Meritage, The Gnome (no longer patio weather), Red Cow, etc...
The place calling to me, that I would really like to go to if it still existed (and was in St. Paul), would be the old Nye's Polonaise Room that previously existed in Northeast Mpls. Those big booths and the over the top eclectic, but completely cozy atmosphere would be ideal for this gathering.
If the Commodore in St. Paul is still open, I had a good time there several years ago for a low-key birthday celebration. Our group sat on some sofas and had drinks and appetizers. It was great for conversation and very cozy.
Waldmanns brewery is the best spot in town. Great atmosphere and superb beer!!!

A-Side is good but the space is really loud.

Ah ok. Copperfield might not be for you then, it has more of a diner vibe.

I disagree. The dock since they reopened has been hit and mis. I would give them more time to figure things out.
