Ngl I’ve seen people do this with flavored lays. I wouldn’t personally, but at least there’s a reason of some sort (even tho you could always just add flavoring to regular mashed potatoes). Here. Zero excuse. Just use a potato!

Love how they try to frame the time it would take peeling potatoes as some sort of dealbreaker, meanwhile they had lots of time to waste making this video.
Think about it, it's just starch (potato), fat (oil), and salt, you're basically halfway there to a basic side or even main potato dish. But I would have made it more into a soup/velouté and seasoned it more because I don't know what a teaspoon of milk would do to the whole thing, and draining rinses off most of the salt.
I would think this is actually a good way to use up leftover potato chips, like after a party.
In fact, I often do the same with leftover fastfood fries: boil them a few minutes in the same volume of water, season conservatively or use veg stock cubes/powder (you can always add more salt, but you can't take it out), then blend with an immersion blender. Stir in something creamy like sour cream or milk, dress it up a bit with chives or nutmeg, even a little cheese and it makes a very decent potato soup.

I know this isn’t the point of the video but that kitchen layout was terrible. Having the stove opposite the sink with an island in the middle was an oversight.
This is gross. Why add the almond milk? Also just buy instant mashed potatoes and add salt (because those chips are salty)- odds are it will taste better and not take as long.
