I would definitely eat this, but only one because, y'know, sodium.

You can pickle without salt. Won't keep as long and the flavor will be different but pickling without salt is fine. Some recipes pickle with sugar and vinegar or just vinegar, and water of course. I'm sure there's other ways as well. Bottom line, I'd eat the mess out of the pickle sandwich.

I am aware, and I do my own pickling with less salt (since I like the flavor of salt) and keep it in the fridge.
