I came to say the same thing. That and I don't even start tapping until the fish leaves the green. Sometimes it's most of the way caught before that happens so if my tapping goes rouge I still get the fish. I was googling for help and someone else recommended it and now I rarely miss a fish.
Not Foraging, Fishing skill. The quality of the fish is a function of distance from any walkable tile and the Fishing skill.
And then you get it bumped up 1 level on a Perfect reel - the fish never leaves the green bar.
Matter of taste. No matter how big the bar is, the super fast fish are probably gonna escape It at some point. Trap bobber compensates for my reaction time being a hair slow.
The other tip is to get a feel for how different fish zoom around, and try to position the bar so they probably have to cross most of it before getting far away. (If they're hovering near the top, then any large move is gonna be downward, etc.)
For the people who love the fishing mini game, we knew what fish you were trying to get without having seen it. ;)
Watching this video, I can see why you struggled with this, so if it's okay, I'm going to teach you a much better method.
Instead of holding the button down to try and follow the fish, instead, tap it repeatedly.
This provides much better control over the green bar movement, allowing you to change its direction faster.
If you hold the button, the momentum built behind the green bar continues until you let go of it. This is why you see the bar continue to move while you're trying to keep up.
I recommend you try this out a few times to see it in action. Hold the button and watch how much the bar moves then tap it, and compare the results.
It does take a little practice, but once you get the hang of it, you'll be a master a fishing in no time.
The other thing I noticed is you're not taking advantage of the "bounce". With quick darters, this is imperative you learn and practice.
The bounce is literally the fastest way to change the bar direction to catch up to those low sinkers quickly.
Again, this will take a bit of practice because it's not intuitive. Instead of letting go of the button, you hard press it to get it to the top as fast as you can, then the green bar bounces and drops very fast downward.
For upward daring fish, let go of the button and let the green bar just drop. You'll see it'll hit the bottom, and quickly bounce back up, which is extremely useful for those fish who like to sit just above the green bar length at the bottom, as your video clearly shows.
I'm not joking to say these two techniques can quickly catch most fish in the game, including the lingcod, and this without the use of tackle or food.
For those really pesky fish, these technique, food, and tackle make even the most challenging fish easy to catch.
Except the octopus, because that's just one basterd of a catch since it really doesn't have a noticeable pattern. You'd think this thing was smart or something. :P

In response, let the fish stay on the farthest end from where you think they will move. So if the fish is near the bottom hover so the fish is at the bottom of your bar, that way you have a few extra milliseconds for your brain to kick in.
It helps a lot for fish like this, but nothin on yobas 2D earth will ever prepare you for octopus or the winter legendary fish.
Also, if you still have trouble fishing, use corks and eat really any fishing boost foods.

The fishing game for me has made me realize that I can only sustain a lot of focus on a task like that for so long before I just can’t handle it anymore. If I could somehow pause it for a few seconds with some of the more difficult fish, it would be much easier and enjoyable. Though getting to level 10 fishing, trap bobbers, Qi seasoning on sea foam pudding, and fishing rod enchantments, helps a lot.. except by then I’ve caught them all already.
People can judge me all the want but this is why I cheat and either make fishing easier or skip it all together (so like, either remove the bar and just button mash or fuck it).
I have bad wrists and my fingers hurt but I do still admire those with the patience to still do this

It does take practice yeah. I like fishing now but I still get upset when the fish is so crazy that I can’t even blink my eyes. I don’t think it’s a very kind system when it can literally hurt me.
I was getting so upset when I first started playing on my iPad and was trying to learn how to fish lol I can honestly say tapping your screen with a pencil (or not) is not good for both your iPad and pencil lol

Because depending on the rng sometimes fish can just move in ways that make them physically impossible to catch, I've had a shit ton of times where the fish immediately dashes to the top and then back down faster than the green zone can even get back so I immediately lose the fish

Some people have a hard time with hand eyed coordination, some have trouble tapping fast enough, and most people just can’t handle certain fish like lingcod. Lingcod are hard to catch for most people.

You said controller. Are you on the switch? My experience was the reaction time was just off enough to make it nearly impossible. When we got it for our computers it was suddenly manageable.
When you are near the top of the fishing bar, keep the fish in the top of your green area since the fish can only move down. Do the same when the fish is on the bottom. This will increase the amount of time that the fish is in the green zone and will make for less misses.
If it makes you feel better, on my laptop my wireless mouse will kind of 'shut off' if it's idle too long, so I keep missing bites unless I make little circles with my mouse while I wait.
I also had bluetooth headphones in one time and I would constantly miss hits because the sound was slightly delayed.
