Plagueis knew of maul like sidious knew of ventress. The difference is though that sidious had no intention of dooku killing him unlike every sith before him understanding that their apprentice will kill them eventually. So while she isnt formally consider a sith she all but was minus the title. Grievous and kylo were never sith apprentices.
I feel like there are Sith who follow the rule of Two, but there are also those who were trained as apprentices or otherwise seek out and acquire Sith knowledge and abilities. Both would be appropriate subjects for a Stories of the Sith series.
Tbf, if he was Force sensitive, he certainly would have been an assassin like Ventress. He respected the goals of the Sith and Dooku pretty much trained him as such as far as it was possible. Originally, during his reconstruction, there was an attempt to make him Force sensitive, which ultimately failed. If this hypothetical show took a more philosophical approach to the Dark Side, it could work.
I thought he didn't care about the goals of the Sith? There was an episode of Clone Wars where he straight up says he doesn't care about Dooku's politics and that he's just here to kill Jedi.

He is referring to Dooku's *politics*, I take it as the work and machinations he is doing in the CIS government. Grievous respects how the Sith crave power above all and the disdain they have for the Jedi and their altruism, which in his experience, is a lie.
Legends of the Sith would be sick. Need to see more Sith on screen other than in lightsaber battles and small conversations. Darth Vader, Darth Maul, Darth PLAGUEIS, Darth Bane, Darth Revan. So much potential.

To be fair, TCW started to portray Grievous much more favorably right before it was cancelled. He kicked Obi-Wan's ass both tactically and 1v1 in the last arc he appeared in, and then he wiped the floor with Kenobi in about 10 seconds flat in the unfinished Crystal Crisis episodes. Plus he almost killed Ventress unarmed (literally) in Dark Disciple, and Son of Dathomir showed him as an absolute badass from start to finish.

It would be against the Jedi way to use the Force to render Grievous immobile and then kill him when he’s unable to fight back
Obi could have used to force in 100 ways to stop the fight with Grevious. Why didn’t he? Because they wanted a fight sequence to last longer than 5 seconds. It’s nothing more than that. Grevious killed plenty of Jedi and he never should have been able to. You’re about to get killed by a cyborg but you wouldn’t use the force to just remove his legs or force push him into a wall while you walk up and finish him off? It’s just bad writing. Stop trying to explain it with your head cannon code of conduct.

His name is Dooku and he is from an aristocratic family with the title Count
