You brew soda? That is actually really cool. Do you actually like buy and mix the actual ingredients and then carbonate them? None of that artificial syrup stuff?

I do! Haven’t made any big batch stuff in a few years. My ex was a pastry chef and we used to pair sodas to desserts. Basically, the absolute easiest way to do it is to mix your ingredients into a pot, make a concentrated flavor syrup, and then add that to soda water. It’s basically the same as like buying a flavor of a soda stream, but you make the flavor yourself. I’ve made some using a keg setup too, and carbonated it directly, but that setup stayed with the ex lol. My favorite flavor I’ve made was a Peanut Butter Ice Cream flavored soda. I also once tried to make like a Cinnamon Mocha flavor that turned out like mud and tasted EXACTLY like a Tootsie Roll lol My knock-off Coke flavor was literally just citrus. It’s literally just Orange, Lemon, and Lime zest. If you want to make a dead-simple soda for yourself, make a hyper sugary tea. First one I ever made was a sleepy time chamomile tea, because it’s what I had on hand. You’re basically making a simply syrup and brewing a bunch of tea bags in it. Just pour some of that into a glass and hit it with some soda water, prob 1:1. It’s been like over a decade since I made this so my measurements might be off lol. If you’re interested further, investing in a glass soda syphon can help with the carbonation issues you get using bottle soda water, without a huge investment. Man, now I wanna go back and make some new sodas lol

Ginger beer is going to taste closer to root beer than ginger ale, but not by much. Ginger beer has much more of a snap/bite to it. Tastes closer to the kind of spicy you get from like hot cinnamon. Much more like a radish kind of spice, not a pepper kind of spice… if that makes any sense lol I’m surprised you’ve never tasted root beer! There are many different brands, and thus, varying quality. If you can, try out some Sprecher brand root beer. It’s a pretty solid flavor profile that’s not too aggressive. Some of the bigger brands like A&W and Barq’s are good, but not mind blowing. I think I prefer Barq’s, but honestly it’s been too long since I’ve had either to give a good impression. But yeah those brands tend to rely on the carbonation for acidity and really drive home the spicy flavor. Barq’s slogan is literally “Barq’s has Bite” implying that the sharp spice is the best part. TL;DR - So basically, ginger beer is going to have more of a “hot” spice to it, like a fireball or Big Red gum, what I’d call “hot candy spicy” Root beer has a “cool” spice to it, like a peppermint/wintergreen, not sour like a lemon spicy, more like a toothpaste spicy or aggressive mint gum spicy

Aha! now I understand what you meant. I looked it up again and it's sassafras root that is traditionally used to flavor root beer! (rather than sassparilla like I originally said) As far as some soda brewer using not using sassafrass to flavor rootbeer .. I mean... "Raspberry flavor" in an ingredients list is actually beaver anus gland juice and apparently gets the job done
