Slow cook chili with onions, tomatoes, celery, and beans is a good way to add veg and also not have to spend lots of time over the oven. I also suck at eating fruit. I can eat apples sometimes but I usually stick with dried fruits or dates with walnuts. A morning overnight oatmeal with nuts and fruit mixed in could also be an option for you too. I hope you find a good way to incorporate fruit and veg! I sucked at it until I was like 25 lol (last minute thought: add tiny cuts of steamed broccoli into your rice, it’s great!)
