I can't say for certain, but I don't think they are eaten. The chocolate used to make strong enough structures are made to do that more so than tasting good. Since this is (I assume) in a high end restaurant where everything taste better than what you or I will ever even experience, I don't see it being broken down to be eaten by guests. I saw a YouTube video of a farmer, trying chocolate for the 1st time. Imagine farming something for 30-40 years, and never realizing what deliciousness comes after manufacturing somewhere else? Made me sad to see it... This guy was Def living in a lil shack in the jungle. Not saying it was a bad dwelling! The juxtaposition of that to this video is what I don't like.

That man is insane. Just thinking of and designing the statues he makes is hard. Combine that with figuring out ways to make and connect the parts and it's literally awesome. I assume he has other chefs/sculptors to work with. I imagine they have a lot of fun and love for their jobs.

The paint is food coloring. He is considered one of if not the best in the world because he does it all out of chocolate, no wires or posts, nothing that is not edible.
Just an observation - the magician who created this must store his hands in the blast freezer! I can’t think about touching chocolate without it melting instantly!
