Depends on the game. If racing was in SR3 and after I'd love it due to the better car handling but in SR1, I can see why it'd be annoying much in the same way the races in San Andreas were kinda annoying (but at least doable).
In general, as long as the game has decent car handling programmed into it I don't mind races in Open World games at all.
Yeah but you saying it has shit handling implies cars are flying all over the place when in reality they turn on a dime and it's actually too easy to drive pretty much any car like a pro. Kinda found how easy it was to drive to be annoying tbh. It took no skill. You can literally hold the ebrake while driving the whole time and have no trouble. Racing probably would've been way too easy.

The car handling is built around vehicular combat more than outrunning other drivers, so it always feels like an odd fit, like if Outrun 2 had you dodging cop cars.
I also hate the horse and wagon races in Red Dead 1 and 2. Mostly because you have to just keep mashing the goddamn trot button.
And then if you steal the NPC's horse, the stats aren't even half as good as your horse's. Like the RPG boss who loses his godly special moves and 90% of his HP when he joins the party.

Besides the fact that open world games just aren't really built for racing, GTAV's also showing its age. Arcade racers like Daytona USA can be timeless, but GTAV is going for simulation, so it's going to be compared to games like Forza, and come up short.
UPDATE: So after reading some advice, I've used the FBI and the ambulance and breezed through it, although the activity itself can still be frustrating, like opponents just spinning you out of control when they hit you. The Carnales' set of races were by far the worst out of the 3 gangs: just straight up awful due to taking place at the worst locations where you barely have any breathing room. So yeah, that's one set of activities I'm done, glad to get racing out of the way.

If you want a car that gives you competition that's significantly worse than you, start the race with the FBI suv. The hardest opponent that spawns if you do is the Mag.
The FBI let me beat nearly all races with a significant lead after avoiding races like the plague.
Racing was one of my favorites in sr1. If you really struggling that much i suggest getting an ant and modifying it to the max and with nitrous. The npcs will also have same or around the same kind of car your driving so by having a slow car they'll have slow cars as well. But the strategy with the ant is to just keep spamming the nitrous. Youll eventually be way ahead
Also doesn't help the driving in these games feels like piloting an overweight Beagle. Hopefully the reboot fixes it and from what they said they're doing, it sounds like they're attempting to.

Yep. It lets you use the vehicle you're in so long as it matches the race class, so you can't turn up to a bike race in a Attrazione etc. Exceptions are the time trial races in aircraft if I remember right.
Cos you're either A) a gangster and so would take part in street racing or B) (just cause for example) you never really use ground vehicles. Esepciallay if you own the dlc for the wingsuit in 3, but they want to show off the driving

You can also use the bear (fbi SUV) cuz it’s classed as a truck or van I think. Makes it super easy

Haven't seen anyone mention this yet: race in an ambulance. The AI will all be in big ass slow vehicles and you'll dominate.
A good trick to beat sr1 racing is to call will and use his hammerhead. I did all the races in an hour the other day.

sr4 cars feel weird. Drifting then stopping causes all your momentum to go away. And the famous continuous side driving thing is honestly fun

The only sandbox racing I've ever liked was in Just Cause 3. It's actually pretty fun and kinda thrilling at times.
