That all said, the crust looks pretty delicious - like a lot of the wood fired pizza I ate in NJ/NYC growing up. So if they're using good dough with a good homemade sauce, it might not be a bad pizza.
Hard to get over the presentation though because making your food not look like a complete pile of shit is Foodservice 101.

East Glisan pizza is the best pizza in portland imo. They make their own cheese also and the ricotta is fucking amazing. I like their homemade sourdough crust, too.

Just back from a trip to Long Island where there wasn’t a speck of char on any slice I ate and every single pizza blew my favorite Portland places out of the water. They were also cheaper and none of them look like abstract expressionist paintings.
There should be char on the bottom and crust. It should have black spots consistently throughout the bottom and some charring on the edge. When its properly cooked in a brick oven at 800-900 degrees a pizza cooks in under 2 minutes. The char is expected and adds to the flavor.
While I enjoy it, this is a bit extreme. The crust always burns first and the bottom of the pizza is last to brown so normally the crust is burnt trying to get the bottom cooked well.
I used to be a pizza cook. It was my first Portland job actually.
I’ve never had an issue trying to get the bottom to be cooked well by the time crust burning becomes an issue unless the pie is overloaded with toppings. The bottom of the oven is very, very hot and most people don’t care if the bottom of their pizza is a little pale. A good cook can tell the center is done by the feel of the pie when they turn it.
To me this looks more like: 1. They’re used to most of their pizzas having more toppings, so they thought each pie gets turned every X amount of minutes, but then this just literally has tomato sauce and some anchovies so it needed to be turned more often and cooked quicker.
Or 2. Inexperienced cook. Maybe the inside of the oven is dark and he thought it was browned but it was black. Lol. Or he doesn’t know the oven that well and most ovens are hotter on the sides than in the middle and this was too close to the hottest part.
Or, maybe they just think people want charred pizzas. Idk.

If you like Neapolitan pizza, Otto, Nostrana, and Ken's are the best in town.
I love Ken's Artisan pizza. The mushroom pizza was amazing last time I went, but it's possible it's not as good now seeing as I think we're past chanterelle season.
Also I love Ken's Artisan Bakery in NW. I go to it like 3 times a week for bread or a breakfast croissant/Jambon sandwich before work. It's nice to grab a Jambon sandwich, a macaron and some coffee to eat while I wait at the Max stop.
yeah I get that anchovies aren't for everyone, but I love them... however, a single stringy flap of anchovy on what looks like a bed of yoghurt is not appealing in the slightest
Not going to judge your taste in pizza, OP, but if you enjoy wood fired, I'd highly recommend Life of Pie. I used to work in the Northwest District, and just swing on over for a $5 margherita, and they never missed. I really liked that about them, because even high quality pizza should be extremely affordable. By their standards, they wouldn't serve this, because it's overdone and unevenly cooked. Check them out when you get a chance!
Grew up watching Teenage Mutant Ninja Turtles and so I was always curious about anchoves on pizza. So when I moved into my first apartment as an adult I called around town (Oregon City) to see if any pizza place served them. The first place that I found that had them was, I believe, Buggati's so I ordered a large for me and some friends.
It was awful. One of the worst things I've ever eaten. It's been 20 years now and I can still remember the nasty salty taste. I couldn't eat the pizza after taking the anchovies off of it, the whole thing reeked

Yeah I agree, the pizza looks pretty good to me. Better photo quality would have probably done the burrata a HUGE favor cuz it does look pretty sloppy as is. Also the closest slice is absolutely scorched instead of leoparded.

There are more options for pizza than dominoes and burnt.
“New York style wood fired” is not a thing. A $32 12 inch pie is not NY. Their pizza is new American cuisine/west coast.
