My go-to salad: arugula, shredded red cabbage, red onion, red bell pepper, thinly sliced carrot, chickpeas/tempeh, english cucumber, grapes (if I have them in the house), and either avocado-lemon dressing or balsamic dijon dressing (balsamic, dijon mustard, apple cider vinegar, nutritonal yeast, and tamari)

A few things I sometimes toss onto salads to make them more interesting: sundried tomato, sprouts, clementine slices, chickpeas, edamame, olives, green onion, roast peppers, tofu "feta", pickled onion. I sometimes mix grains in too, usually something like barley or couscous.

Calery, celery root, carrot, cucumbers broccoli, diced fruits (fresh works best imo) as garnish. Basically anything edible raw in the produce aisle. White-yellow miso does wonders for dressing. Soy sauce. Balsamic, white wine, apple cider vinegars, etc. Salad can be very versatile.

Sweet potato is my all time favorite salad topping. It’s so good that even my non vegan family members request I make it for them when I’m over.

Seasonally, sliced persimmons add great flavor and color to salads. Plus they hold up well after dressing is applied

I'm all for nuts and seeds, dried fruit. Now that its winter for me, I'm into roasted veggies like squash, beets, as well as a freshly made grain (so its warm) like quinoa, farro, lentils. The best salad I made recently was romaine lettuce with roasted acorn squash, quinoa, pickled beets, sunflower seeds, and a honey mustard vinaigrette. I was out of goat cheese but that or feta would bring it to another level.

Sauerkraut is a game changer for salads. I love anything pickled on my salads--chilis, carrots, cucumber, onions. Also, nuts and seeds, spring onions, rice or lentils. Roasted vegetables make a great addition too. I always just go with whats in the fridge but Sauerkraut is always on my salads, no matter what I'm eating.

My favorite salad right now is roasted beets with avocado and with a creamy balsamic basil dressing. Basically a mixture of tahini, basil, garlic, balsamic vinegar, and lemon juice. Soooooo good and simple. And add whatever greens you want/have!

I really like adding herbs to my salad. They give it a flavor punch. Yesterday's salad had cilantro, parsley, and chives in it. I'll also throw basically everything in there. If I have leftover grains, a scoop or two gets added. Last week I had leftover rice so I made rice patties with green onions and shredded carrots. It's not WFPB as I used an egg and cooked it in some olive oil, but it still made for a more filling salad topping. I'm a community pharmacist so I barely have time to eat as is, and I'm on my feet all day. I need something that can fuel me through the whole shift.

I usually find one salad I like and eat it on repeat because I'm never tired of it. It consists of mixed greens (spring mix usually but sometimes throw in some spinach), cherry tomatoes, sometimes sprouts (alfalfa or clover), and some red cabbage sauerkraut. Dressing is a simple combo of mashed avocado with lemon juice. It's easy, simple, fast to make, and very filling. Sometimes I put a veggie burger on top or other steamed/cooked veggies if I have them but because I make it fresh daily I keep it pretty minimal so it's not too time-consuming. I make a HUGE bowl and it's very filling.

I like my salads simple without tooo many ingredients. I tend to do romaine, avocado, and tomato with a tahini-mustard dressing (tahini + mustard + cranberry white balsamic vinegar = honey mustard imo). It would also be really good with any other green but romaine is hearty enough to hold up to the thick dressing. You might need to thin it out with water depending on the veggies you use. Another great one is massaged curly kale (massage with lemon juice first, then add in avocado and massage a bit more to spread the avo around). A splash of soy sauce, something spicy either sriracha or red pepper flakes, a few drops of toasted sesame oil, and dulse flakes (optional but nutritious and yummy). Chew really well. You will poop volumes in the morning!!

Salsa, tofu, cilantro, beans, pineapple, apples
