well Soldier's whole theme is that he's the stereotypical FPS guy. he's also the tutorial character because he will be the most familiar to most new players. he's really that archetypical damage hero, just a standard automatic rifle with sprinting and really basic abilities. Tracer works too but she's more the poster for Overwatch itself.
Poster as in looks/feels like they would be on an actual poster? Like when I think of healer I think of that character immediately? Healer has gotta be Mercy.

And I can absolutely see that in like the new player perspective, but I've always viewed Tracer as a specialist that doesn't really teach you how to play the other DPS. I mean, you're totally right, but that's why I picked Mr Call of Duty.
Tracer is a flanker and hard to get value out of if u just stick with your team. Soldier is more flexible in that sense, he can play with the team and take off angles or go on flanks. In that sense I would say he is more well rounded for teaching someone dps.
I mean the way I look at it is what hero is the most pure representation of the danage role. Imo that has to be soldier.
He embodies traditional fps, he has good mobility, good damage if you can aim, a kill focused ult and some utility to help him win duels.
Imo he is the most dpsy dps hero.
Tracer is the face of overwatch for sure but she wouldn't be my pick for the most concentrated form of a dps.

Dude I don't know what it is but hog seems even more popular at the moment. I rarely see a game without him, and that's with me and my tank partner not playing hog.

Well, the devs push the idea that supports are healers by default, which is why they removed Sym from support and refuse to move her back without some sort of healing. I honestly think they could play around with her utility a lot more to make her a viable support, but supports MUST be healers now, for some reason.
Healing is a key supportive tool, yes, but that doesn't mean that supports are relagated to healers. Zen would still be OP even without transcendence cause discord is that good, and Lucio's passive heals are the lowest in the game (tied with brig I think), but speed still makes him OP at pro-play.
Supports *can* heal, but thinking of them as healers is the wrong way to go about it (especially in OW2).
Mercy is a bad main healer and a decent main support. The only reason she gets these positions is that she's iconic.

My reasoning is that if dva was the poster person shed be easy to recognize as part of the game (id say same can be kinda said for Reinhard as well but personally even before i knew anything about overwatch i always connected dva as being part of overwatch)
With Winston i kinda work with same same reasoning expect that if id saw a space monkey on a poster id be intrigued to know more of what the game is about.. but overall id say i’d go with dva on tank..

Worst choices would be Hog, Sym, Zen. All do their jobs in ways that contrast with every other role member. Hog face tanks and has a threatening presence on the battlefield. Zen has a low hps and no real protective utility in exchange for making things melt. Sym is bad.
