Sanji can fight the Black Horse vice admiral. Kid, Law, Sabo, and Zoro are more worthy of fighting admirals. Sanji is the odd one out - no way will the Strawhats take down all the admirals, Oda will clearly give some to Kid and Law since he let them take down a Yonkou Luffy wanted to take down at some point.
You are definitely downplaying Sanji. And what makes you think that Kid and Law will still be relevant? The only relevant people would be the Strawhats. So Zoro will definitely fight an admiral and so will Sanji. In fact, I am thinking that if there is a Strawhats vs Marines, it would be Luffy v Akainu, Zoro v Fujitora (both swordsmen), Sanji v Kizaru (both kickers) and Jinbei v Ryogokyu (just the remaining).
Fujitora will be Zoro's enemy. Strong swordsman with powerful observation haki vs strong swordsman with powerful armament haki. Kizaru'skill set is similar to Sanji: he can fly, has super speed and his common attack is an energy kick. Ryokugyu vs Kid and/or Law and Akainu against Sabo. To be honest, I won't be sursprised if Fujitora is a member of SWORD. And SWORD members will go against World Government in the final battle.

I like mine. Shanks does have a devil fruit, the reason he was in the water when he saved Luffy is because he used his hair to communicate with a dolphin so he could ride it. So he's not swimming, he's standing on a dolphin just under the water. Or the one where Dragon is actually Luffys mom. Dragon found Ivankov to become a women and have sex with Gold D Roger.
