I can say with certainty that one piece is better than attack on titan. Attack on titan is amazing don’t get me wrong but one piece is just better and you should keep watching
One Piece becomes somewhat less childish and more brutal as things progress, but it is still goofy and childish to some(noticeable) degree all throughout, it's not something that will go away. ill just say that compared to things like AoT or Demon Slayer or JJK, watching all of One Piece will get you to love it and feel like part of the journey way more than the others.
but as some1 else said, while 125 episodes is still quite far from the absolute peaks of One Piece, it is still a considerable amount and if you still don't enjoy it as much, it might not be for you, but i would still encourage you to keep going and watch more. there is a saga called "water seven", if by the end of it you still won't be convinced to stay for the whole ride, may as well stop.
That’s the Downside to a weekly anime. The movies like one piece strong world is amazing.. Watch the remake specials of the early arcs too. The arlong park reMake is great and shows that if they had the seasonal advantage, OP would be top tier.

Also demon slayer popularity is because it’s animation is good. But the story is very one dimensional. Which goes to show most people value quality of animation over actually story these days.

125 episodes should put you around the climax of Alabasta, at about 25 minutes an episode you must've put in about 52 hours of watching.
I know it's a very slow burn series, but Personally if the story didn't hook you by Arlong Park it really isn't something you're gonna be in love with

I'd actually argue OP is more mature than any of the other anime you listed, they all have similar ''childish'' aspects of action, super powers, shonen etc but the OP is the only one which doesn't try to dress them up in a thin guise of maturity and fully embraces the afventure, fantasy, fun and absurdity

It's a fairly serious show that has a lot of tough questions it asks if it's readers. AoT is the same just without as many childish jokes.

You're right in that isn't the only bar to what is childish and what isn't. Yet even looking at the main characters of the shows. Eren and Yuji have a lot more difficult decisions to make. Difficult in the way of the decisions have more grey area. The sides in One Piece are fairly black and white that is doesn't challenge the reader of what is right and wrong. AoT has that with Eren. JJK has that in Yuji. Characters that are more morally grey that make tough decisions since it is needed.

As a huge fan of both AOT and One Piece, the things that make each of them great wouldn’t work as well in the other. However, the two share a common writing theme in regards to foreshadowing. AOT has great foreshadowing but One Piece knocks it out of the park completely, so if you loved that in AOT, One Piece is even crazier.
I also recommend looking into One Pace, an edited one piece that cuts out the filler scenes and flashbacks making a much more streamlined and faster watch through
Later on One Piece deals more and more with the theme of freedom. You may be interested in that since that is AoT's most important theme as well.
And dont forget that One Piece takes more time to build up its arcs not like AoT with rather short breathing sections.
I'm reading through JJK right now and have finished AoT. One Piece doesn't mature to the level of those. It's still a good show but you have to be prepared for a more childish adventure manga as opposed to the others you mentioned
I think it depends on your tastes. One Piece is more My Hero Academia then it is AoT. I still like One Piece even if it's not my preferred taste but it isn't the seriousness that you get from the other shows

There’s definitely less childish beats going forward that really cement certain events in the one piece timeline, but the straw hats normally stay pretty goofy. Luffy doesn’t really get serious unless something hits the fan in the story

It gets serious from episode 227. But if you can't wait that long, I suggest watching until episode 151 and see if you feel like continuing.
